I am in Nigeria coming up on the third month of my 9-month stay here. Living at the University of Ibadan with a host family, I am here with five other University of Wisconsin students studying the Yoruba language. I am keeping a blog for my endeavors in Nigeria called North of Lagos.

Mozarella and Cherry Tomato Bread. 10g of both salt and yeast. 2 tablespoons of olive oil. 400 ml of warm water. 1 Place the flour into your kitchen aid. 2 add the salt and yeast to different sides of the bowl. 3 Add your water and mix for 8 minutes with your dough hook. 4 Add the olive oil and mix on a higher speed for 2 minutes. 5 Leave to rest in an oiled bowl for one hour.
